The festivities of December bring with it the fragrance of
spices like cinnamon and cardamom that are layered into seasonal winter treats.
For many, there is one item known to embody this sense of holiday cheer: the
Christstollen, also known as the Stollen Cake.
Originating in Germany, Stollen Cake has been mentioned in
history since 1329. It’s hard to believe that the sweet confection we know
today with its aromatic spices, dried fruits and nuts started in a very
different form. Stollen cakes began as a tradition to celebrate the Advent time
for Christians and commemorate the coming of Christ. The original Stollen was
made with only oatmeal, oil and water until the late 1400s when the use of
butter and sugar was finally allowed. Other ingredients such as raisins and
candied citrus peels were added until the cake evolved into the Stollen we know
today.
The Stollen Cake is very similar to the fruit cake. However, as
Stollen is baked with yeast, the texture becomes similar to that of bread,
whilst fruit cake is more cake-like and drenched with rum or brandy depending
on the recipe. Stollen Cakes are sprinkled with icing sugar, and some recipes
may include marzipan. The shape of Stollen Cake is a rectangle with a ridge in
the middle, symbolic of the baby Jesus in swaddling cloth. In contrast, fruit
cakes are usually found in a loaf or round shape.
The most famous Stollen Cake, believed to be the original, can
be found in Dresden, Germany. To authenticate the Stollen Cake, a special
certification system has been put in place, and genuine “Dresdner
Christstollen” Cakes are awarded The Golden Stollen Seal. Only 120 bakeries in
Dresden are holders of this seal. In addition, the city of Dresden celebrates
Stollens at the Christmas Market (Dresden Striezelmarkt), known as one of the
oldest outdoor markets in Europe, having existed since 1434. At the event, a
giant Stollen Cake will be paraded with a historic horse-drawn carriage along
with a traditional knife designed specifically to cut it. The parade also
features the year’s “Stollen Girl” or “Stollenmädchen”.

celebration, then we hope you have the chance to try the original Dresden
Christstollen. However, if you find yourself in other corners of the world or

Having been blessed with multiple work trips to Le Brassus over the past decade, including one that involved filming the natural surroundings of the Blancpain manufacture, this writer can vividly understand the phrase “the deep green shade of Vallée de Joux fir trees” used in Blancpain’s latest press release to describe the dial colour of their new Villeret watch models.
